Q & A On Recipes

QUESTION:Hi. I just came across your blog and am looking through your recipes and meal weeks. Wanted to ask what the veggie chicken cream sauce was? Is it something you made and if so, can I get the recipe, or is something you bought? Thanks!

ANSWER: This is the post she was referring to. Okay, here is the recipe for the vegetarian chicken cream sauce. My beloved ate a non vegan version of this years ago while out on a business lunch. We looked around and found something that we thought might work.We tweaked it a bit to make it taste like what he ate at the restaurant. lol ;0)

Blend in blender till creamy:
1 cup of cashews, raw, washed
1 cup water

Add and blend:
1 1/2 cups water
1/2 teaspoon salt
1/2 teaspoon onion salt
2 teaspoons arrowroot powder(you can use cornstarch as well)
2 teaspoons mock chicken seasoning(I have one that I love. You can email me if you want it. My email is on the right side bar)
1/4 teaspoon of turmeric(seasoning, you should be able to find it at your local supermarket)
1 Tablespoon of dried parsley

Pour into pot and stir it. It should thicken up fairly quick. I normally stir and walk a way for 2 minutes or so, stir, walk away, stir, etc.

QUESTION: Hi. I would love the recipe for these too. Also, do you know if you could freeze these and then just reheat in toaster oven? That would be a super easy breakfast!

ANSWER: This is post she is referring to. I have never tried freezing them. I have made them up the night before, without putting it in the oven. Then in the morning I just pop them in the oven. If you do try freezing them, please let me know.

4 cups of oats
2 cups of whole wheat flour(I used whole wheat pastry flour)
3/4 cups of sucanat(which stands for SUgar CAne NATural. I get it at my local health food store. It's a healthy substitute for brown sugar)
1/2 teaspoon of salt
1/2 cup canola oil
1/2 cup natural applesauce(no sugar added)
1 cup of milk (we use soy milk)

Mix the first four dry ingredients in a bowl. Then add the oil and applesauce until it's sort of crumbly. Lastly, add the milk and mix well. It should be fairly thick. Pat it into an 8x8 pan. Don't smoosh it down in the pan, as it will not rise. Put it into an oven at 350 degrees for 35 to 40 minutes. Then, like in the original post, just heat up whatever fruit you want and pour it on top. The original recipe said to add a teaspoon of sugar. I use Florida Crystals sometimes. It's a substitute for sugar as well, it's just dried sugar cane, nothing wonky.
